Live in the Country, Work in the City.

I have been living out in the country side near to the Chinese border for three years now. I decided to move out to Fanling and give up the convenience of the so called city life because I was sick of the noise, bad air quality and general decline in the overall quality of life. Before the move, the work commute was a ten minute journey.

The commute now for me from my home to and from work via the train is now 1.5 hours each leg. Even so I think that I could not have made a better choice, the general quality of life is greatly improved, there is no noise or light pollution where I am (I can do allot of star gazing) and the fresh air is just amazing.

Before my move I was surrounded by nothing but a concrete jungle, now I am surrounded by birds and trees and a designated country park which is just 10 minutes away from my door step. The nearest skyscrapers are at least a good 7-8 kM away so there is nothing higher then 3 storeys. Would I change my life style now, not for love or money. I love Fanling and am so happy I made the decision to move to the country side.

Scotch Eggs

6 hard-cooked eggs, well chilled
1 pound breakfast sausage
1/2 cup flour
2 eggs, beaten
3/4 cup fine bread crumbs
Vegetable oil for frying

Peel eggs and set aside. Divide sausage into 6 portions. Roll each egg in flour and with hands press a portion of the sausage around each egg.

Dip sausage-wrapped eggs into beaten eggs and roll in bread crumbs. Heat vegetable oil to 350 degrees Fahrenheit.

Cook each egg in oil about 4-5 minutes or until sausage is cooked and browned. Drain on paper toweling. Serve warm.

Quan Yin, Golden Goddess of the Compassion and Mercy Fountain Pen.




For many centuries, Quan Yin has represented and epitomized the great ideal of Mahayana Buddhism in her role as "bodhisattva (Chinese "p'u-sa)--literally "a being of Bodhi, or enlightenment," who is destined to become a Buddha but has foregone the bliss of Nirvana with a vow to save all children of God.

Quan Yin carries the Goddess and Divine Mother aspect of Buddhism. The same Goddess and Divine energy carried by the Virgin Mary in Christianity. In the Egypt such a Goddess is represented by Isis. In Hinduism represented by Shakti, wife of Vishnu, by Parvarti, wife of Shiva, by Radha, wife of Krishna, and by Sita, wife of Rama.

Quan Yin's name is a translation of the Sanskrit name of her chief progenitor which is Avalokitesvara, also known as Avalokita. In its proper form it is Kuanshih Yin, which means "She who harkens to all the cries of the world."

In Korea, Japan, and China she is called Quan Yin. She is a celestial bodhisattva and an ascended master. One of her jobs in the celestial spheres is to sit on the board of the Lord of Karma.

Buddhist mythology tells of Avalokitesvara's being born from a ray of light that sprang from Amitabha Buddha's right eye. He immediately said, "Om Mane Padme Hum". This is one of the mantras by which he can be invoked in Buddhist tradition.

Avalokitesvara came to be known by most Tibetans as Buddha's earthly representation and as chief guardian of the dharma (doctrine) until the advent of Maitreya Buddha.

Avalokitesvara and Quan Yin are embodiments of compassion.

She is roughly equivalent to Green Tara in Tibetan Buddhism.

In Tibetan Buddhism Quan Yin is seen in her male form as Avalokitesvara. Some feel that the current Dali Lama is an incarnation of Avalokitesvara. It is thought that the female form of Avalokitesvara, Quan Yin, originated in the twelfth or thirteenth century in both China and Japan.

Portable Cans: Nokia Advanced Music Headphones HS-62.

You may ask why am I reviewing a pair of headphones made by a mobile phone manufacturer? Nokia has dubbed these headphones the Advanced Music Headphones model HS-62. It is part of their range of enhancements that are produced for their mobile phones to be used by people who listen to MP3/4 on their phones. So can we seriously expect audio quality headphones from a communications company? This is what I tried to find out and was pleasantly surprised!

The cans are meant for portable use and can fold up very nicely similar to the portable Sony's and Audio Technica's. The HS-62 are silver in color with a plastic case and extremely thick and comfortable ear pads. What was immediately evident was the comfort. The 3.5mm stereo connector is of robust build and gold plated.

Fillet Mignon Recipe

One of my favorite steaks:



Don Henley's Favorite Fillet Mignon Recipe : How to Make Sauce for Fillet Mignon Recipe:

Murgh Makhani

Ingredients:

Chicken - 1.5 lbs, boneless skinless thighs
Lemon Juice - 1 tbsp
Red Chili Powder - to taste
Salt - to taste
Yogurt - 1/2 cup
Ginger & Garlic Paste - 4 tsp
Tandoori Masala - 2 tsp
Unsalted Butter - 1.5 tbsp
Garam Masala - 1 tsp
Big Cardamom - 1
Green Cardamom - 2
Cinnamon Stick - 1″ pc.
Bay Leaf - 1
Tomatoes - 3 large, pureed
Sugar - 1 tsp or to taste
Dried Methi Leaves (Kasoori Methi) - 1 tbsp
Green Chili - to taste, finely chopped
Heavy Whipping Cream - 1 cup or to taste
Cilantro - 3 sprigs, finely chopped

Method:

1. Cut the Chicken to bite-size pieces and wash it well.
2. In a bowl (or large Ziplock bag) add the following - Lemon Juice, 2 tsps of Ginger & Garlic Paste, Tandoori Masala, Red Chili Powder, Salt and Yogurt.
3. Mix well and marinate in the refrigerator overnight for best results or atleast a couple of hours.
4. Grease a broiler dish with ghee, oil or cooking spray and layer the Chicken in a single layer. Broil on high for 5-7 minutes on each side. Keep an eye on it as every oven varies. The size of the chicken pieces makes a difference and where you place the rack in the oven plays a big role in how long the chicken needs to be cooked.
5. For the gravy, in a medium size pan on medium heat, melt and heat the Butter.
6. Once hot, add the Cardamoms, Bay Leaf and Cinnamon Stick. Fry for 1 minute.
7. Add the balance of Ginger and Garlic paste and fry of 30 secs.
8. Add in the Green Chilis and the Tomato Puree. Mix well.
9. Add in the Salt, Red Chili Powder and Garam Masala and mix well.
10. Allow it to come to a boil and then lower the heat and let the gravy simmer for 10 minutes till most of the juice from the tomatoes evaporates.
11. Add in the Sugar and the Dried Methi Leaves and allow it to cook for another 2 minutes before adding broiled Chicken pieces. Mix well to coat Chicken.
12. Add the Whipping Cream, mix and allow it to come to a boil and take it off the flame.
13. At this point, do a taste test and adjust the salt, sugar and the liquid in the gravy.
14. Mix in half the Cilantro in the dish and garnish the balance while serving.

Tips:

1. Don’t have access to a broiler dish? - no problem…use metal skewers or wooden ones(soaked) or just barbeque them on the grill.
2. Great alternatives to making this dish everyday and not feeling guilty about it -

* Use Chicken Breast instead of Chicken Thighs, but make sure you baste the Chicken Breasts while broiling or they will dry up.
* Use Oil instead of Butter.
* Substitutes for Heavy Whipping Cream - Half and Half, Evaporated Milk, Lactaid, Milk or Milk Powder (so you can control the water).

Omega 3 & Fish Oils

Omega-3 fatty acids are considered the most essential fatty acids for your. They are essential to human health but unfortunately are not manufactured by our bodies. Omega-3 fatty acids must therefore be obtained from food sources. Omega-3 fatty acids are easily available from fish, such as salmon, tuna, and halibut, other marine life such as algae and krill, certain plants, and nut oils. Omega-3 is also known as polyunsaturated fatty acids (PUFAs), omega-3 fatty acids play a crucial role in brain function as well as proper normal growth and development.

There are three main types of omega-3 fatty acids that are absorbed through foods and used by the body: Alpha-linolenic Acid (ALA), Eicosapentaenoic Acid (EPA), and Docosahexaenoic Acid (DHA). Once ingested, our bodies convert ALA to EPA and DHA, the two types of omega-3 fatty acids more readily used by our body. In depth research has shown that omega-3 fatty acids reduce inflammation and help prevent risk factors associated with chronic diseases such as heart disease, cancer, and arthritis. These essential fatty acids are highly concentrated in the brain and appear to be particularly important for cognitive (brain memory and performance. Indications of omega-3 fatty acid deficiency include symtoms of extreme tiredness (fatigue), poor memory, dryness of the skin, heart problems, mood swings or depression, and poor circulatory functions.

It is therefore highly important to maintain an appropriate in-take of omega-3 in the diet. Omega-3 fatty acids help reduce inflammation.




Skin disorders: In a study of a large group of people with psoriasis, those who were treated with medications and EPA supplements did better than those treated with the medications alone.

    One of the nicest transceivers ever built was the Kenwood TS-870. It provided Digital signal processing at the IF stage. It used a dedicated computer chip to convert analog waveforms into digital information in real-time, providing the opportunity to filter and enhance the quality of the signal before it is reconverted back into analog form for the human ear. This design uses two state-of-the-art 24-bit 20 MIPS digital signal processing chips that allows signals to be brought out of the noise.     The colorful Yaesu FRG-7000 is an all mode receiver with digital display. It tunes from 250 kHz to 29.90 MHz and includes longwave, medium wave (AM) and shortwave. Modes of reception include AM, SSB and CW.

    Japan Radio Company NRD-515 Receiver.


    The legendary Japan Radio Company NRD-515 earned a reputation in it's heyday for outstanding quality and unparalleled performance. This professional radio receiver covers 100 kHz to 30 MHz in RTTY, CW, USB, LSB and AM modes. It is an undisputed performer for RTTY/FAX reception, coming from a professional marine radio manufacturing tradition for which JRC is synonymous. A digital VFO with with phase lock loop synthesizer, combined with a photo-type rotary shaft encoder resulting in tuning totally free of any backlash. Up-conversion double superheterodyne circuit virtually eliminates any imaging. Just select the desired Megahertz via the MHz knob and then tune the main tuning knob or use the rapid up-down toggle switch. Effective passband tuning is provided to eliminate adjacent channel interference during CW/SSB reception. Selectivity can be selected independent of mode. 6.0 and 2.4 kHz filters are provided as well as two additional slots for optional filtering Other refinements include an antennuator, Delta (Fine) Tuning, accurate calibrates "S" Meter, effective Noise Blanker and External VFO provision. The rear has provisions for antenna input and speaker output jacks as well as a connectors for the optional memory or keypad connections. This radio requires a speaker such as the matching NVA-515. Optional NDH-515 or NDH-518 external memories match this radio. JRC also offered the NCM-515 wired frequency controller. The NRD-515 matched NSD-515 Transmitter and was deemed a top of the class amateur radio set up in it's heyday. These sets are rare and prized by collectors who value quality engineering. The whole front panel was die cast and all knobs were metallic.
